Recipe of the Week: Turkey Salad

Servings: 2


1/4 cup plain greek yogurt

1 1/2 tsp. Dijon mustard

2 tsp. fresh lemon juice

1 Tbs. finely chopped shallot

2 tsp finely chopped tarragon

2 cups shredded turkey meat

1/2 cup halved red grapes

1 sliced celery stalk

4 cups butterhead lettuce


Whisk together first 5 ingredients to make dressing. Combine turkey, grapes and celery with dressing. Place 2 cups lettuce on 2 salad plates and top with turkey mixture!
