Recipe of the Week: Tostada Salad

Tostada Salad

Ingredients:

1 cup lettuce, shredded

¼ cup tomato, chopped

¼ cup black beans (heated)

¼ cup red pepper, chopped

¼ cup corn kernels (defrosted or canned is ok)

¼ avocado, sliced

Salsa

½ cup pre-cooked chicken breast, shredded

1 Tbs plain Greek yogurt

2 Tbs. favorite clean salsa

Directions:

Place lettuce in bowl. Add remaining ingredients and toss.
