Blender Vegetable Soup

Makes 4 Servings


1 carrot

1 stalk celery

3 broccoli florets

1 (10 oz.) box frozen spinach

1 (15 oz.) can diced tomatoes

½ medium cucumbers

1 vegetable bouillon cube

1 cup hot water

1 Tbl. Chopped fresh garlic

Hot sauce to taste


Put carrot, celery and broccoli florets into blender. Blend until chopped. Add thawed spinach, diced tomatoes, cucumber, vegetable bouillon cube, hot water, garlic and hot sauce. Blend until smooth. Heat over stove until warm if needed. (This recipe works best with a powerful blender such as a Vitamix.)
